9. Or you could just grate the potatoes. If you are like me and would cut your skin off with a mandolin. And if you don't have sea urchin on hand anchovy or sardines.

12. I finally realized how to properly use a mandolin. I've always been so scared of mine and used the guard when my fingers got too close the the blade. That hand placement at 3:32 has the be the move to avoid losing parts of my fingers.
