I had a food truck in New Jersey had it for 7 years very busy area it was only in sat and sun, I didn’t work per say on the truck the rest of the week, however I was always prepping, buying food and stuff and doing bills it was nuts and than my wife got sick and I had to get rid of it as well as some other food business at the shore, not easy work but alotnof fun
