  1. In Japan, heart surgeon. Number one. Steady hand. One day, yakuza boss need new heart. I do operation. But, mistake! Yakuza boss die. Yakuza very mad. I hide in fishing boat, come to America. No English, no food, no money. Darryl give me job. Now I have house, American car, and new woman. Darryl save life. My big secret: I kill yakuza boss on purpose. I good surgeon. The best!

  2. God that looks so tasty. Good advice too. So every time a single piece is eaten, it's followed by a single piece of ginger? Is the ginger always picked up with fingers, even if we have moved on to sushi that is not in seaweed roll?

  3. Notice no wasabi was served with the sushi. The chef wants you to taste the sushi as it was prepared (imagine the chef watching someone put ketchup on a well cooked, medium-rare filet mignon before tasting it).

When wasabi is served, I was taught not to mix it into the soy sauce. Once you put it in, you can’t take it out. Turn the sushi to its side, add a small amount of the wasabi to the rice, then lightly dip the fish into the soy sauce as instructed here.

  4. I was afraid of Wasabi for so long. After I finally tried it I realized the heat goes away quickly. It's not like hot peppers where it will hang around or even get hotter. Wasabi is good stuff! 👍
