  2. Never understood US meatloaf. I would much rather make em smaller meatball shaped to get more browning.
    Despite the terrible colour grading, hers actually looks appealing to me. Almost all meatloaf's take "loaf" to heart and literally make it dry as bread. Her meatloaf look like the inside of a proper meatball, not dry at all.

  3. I"m sorry, but the pate comment really bothers me. Comparing meatloaf to pate is like comparing scrambled eggs with hollandaise sauce. Sure they have similar ingredients, but the varying technique used to cook them makes them totally two different dishes. But i digress

  5. I like the cheese as an addition but I don’t really think of it as a binder, or it’s not how I would justify its addition. As the cheese cooks the fat will separate out and help protect the meat from drying out. A restaurant I worked in would wrap the meatloaf in bacon when we did it for family meal and it sort of served the same purpose.

This recipe is like a journey into authentic American cuisine born out of regular old American family ingredients and techniques – the hand mixer for the potatoes, the use of cheddar in the meatloaf, etc. The only thing that could have made it more "authentic" is using ketchup instead of the tomato sauce. I liked this.

  7. Always cracks me up when people talk about their mom's cooking like that 😂. (Not in a bad way.) I remember this chick on Top Chef saying she grew up eating burnt fish sticks with canned green beans.

    My mom was an amazing cook. She actually made fresh flour tortillas like three times a week 😋 OMG but she had this insane Spam dish that was like a Spam macaroni casserole. My dad would eat it dutifully but, Jesus Christ, it was HORRIBLE.

  8. Y'all are too much. Even I can tell the way this was filmed and lit has washed the color out. Too yellowy. I think this would be more appetizing in person. I didn't try meatloaf until I was 16 having never grown up with it, and now it's a dish I enjoy making with whatever variations I feel like. I adapted my recipe from Stove Top Kisses, and now I wouldn't be averse to trying a meatloaf with cheese – just maybe a little less than this recipe. And meatloaf tastes better than it looks lol. No need to attack this woman's childhood.

  9. I was expecting the recipe to be dubious based on the intro card, but it was based on some pretty solid technique. I've seen the same techniques in old meatball recipes. I think the only thing I'd do different is veg. I don't think I'd use a sheet pan, because it's an extra dish. I'd probably just do the veg a little earlier and let it cool in the pan.
