It's been since the 80's since I had this. My Italian girlfriend's mom (Netptune, NJ) made this and they also called it pizza piena. A lifetime later and I had thought about it several times since then. Decided to look it up and came across this video. Love the easy and casual style this girl has. I made a trial run version in a 9" pie pan a couple of weeks ago. It was good but decided to do the springform pan and add boiled eggs this time. It looks great and is in the fridge until Sunday (Easter). I loved this video/girl so much that I subscribed to the channel. Thank you so much for the recipe and the stories about your grandmother and Aunt Annette had me laughing.
We call it pasta loaf. The filling was made almost the same, but not as many eggs. We used orzo pasta, and basket cheese. And our dough was more bread-like. And we shaped them in little 8inch/10 in calzones.
Growing up we called the Easter cake, am I am grandmother would make her is the same but she would use locatelli cheese, Along with the provolone and mozzarella and she also used Parmesan as well, And then she word bake it but without across because none of our family like the crust around it, and she would make one cheese kind and then one with all the meat
Farideh is like a modern Julia Childs. She brings Entertainment and Mirth while she cooks. Sure it's not French cooking but still. It always makes me smile and even tear up at times. She is the Real Deal. When a "Pagan" says God Bless You!!! You know I mean it. Don't ever change and thank you for being a Bright Light in an otherwise depressing 2021.
Somehow I feel spending a day in the kitchen with Farideh would be highly entertaining, but ultimately useless because after all the snacking cheese and meat I doubt there's much room left for the actual food.
Munchies and farideh are just so tired looking compared to the other food channels now. Especially since all the celebs have abandoned Vice. Farideh is just too boring to be the face of munchies especially from her woefully small and outdated kitchen.
Our family recipe has evolved into small turnover sized pockets of crust with the amazing filling. We use dried Italian sausage and pepperoni, three kinds of cheeses, eggs and I look forward to it all year! We call it Shadone. When our family went keto, we stopped making it in the crust and just bake it in a glass pie pan. Still delicious!
