The leaves use light to synthesize those nutrients into sugars and carbohydrates to feed itself and grow. Without some foliage all you have is a bundle of sticks. No matter how much water light and nutes you give your plant it wont be able to photosynthesize and it starves.
so what happened to these plants? no update 7 months later, did they die?
Rule of thumb is shouldn’t strip more then 30 percent foliage will send into shock

Biggest waste of time I've ever seen
You just want to defoliate enough to get a good air circulation, you need to keep some of the fan leaves, I usually keep the ones on the outside.

What cultivars are you growing? They look pretty nice, long veg period?
Some of the fan leaves are a good source of energy and vital nutrients don't don't butt naked the plant think of it was solar panels
