I made this last night. The only things I did different was using heirloom tomatoes and I had to reduce it for about a hour and a half.
Also I used linguine just my preference.
Came out so delicious. I loved the heirlooms with the pasta and spice.

Wow that looks so so good. Btw. I am no chef so forgive if I am wrong. But adding the cognac in that state of the dish will likely not bring much flavor or complexity to the dish? But if you wait with the cognac until you added the tomato's and the fish stock the the cognac would the more time before evaporating so the flavors could merry for longer? What ya think girl?
