  1. 😇 Jayhawk chili 🍴 In chili pot on medium heat add 2 ibs of ground beef, 1 Italian sausage, 1/4 cup canola oil, 2 Tbsp chili powder, 1 tsp salt, 1 tsp pepper, 1/2 diced onion and 1/2 diced green pepper and cook 5-8 minutes. Add puree of: 1 cup water, 3 poblano peppers, 13 oz. chipotle chiles, 1 jalapenos peppers, 20oz. Tomato Sauce, 1 Tbsp Garlic Powder, 1 Tbsp Onion Powder, 1 tsp Cumin. Simmer a couple minutes. Add 1 cup of cooked Pinto beans. Topping with shredded Colby Jack cheese and serve with Blue corn tortilla chips for Crimson and Blue chili.

  2. As far as beans in chili goes if I'm making chili to eat as the actual meal I put kidney beans in it, but if I am making chili sauce to go on hot dogs or fries I don't use beans just ground beef. My Mom always put red and green peppers in her chili and I think it changes the flavor too much and you end up tasting the acidity of the peppers over the flavor of the beef and seasonings, although I do like to slice up a few jalapenos super thin to top the finished chili like a garnish along with a handful of shredded American cheese and a dollop of sour cream..now I'm hungry haha

  3. I am so mad because I am from a different part of Texas and I hate that this has beans.

But I am also a fan of food and this looks dope af and definitely going to make it.

  4. When he talks about regionality of the dish he’s speaking to an extremely small space within San Antonio, or any town or city in south Texas.

If you grew up on the west-southwest side of San Antonio just in the pocket between Culebra, 90 and McMullen then you make chili wrong because it’s us on the southeast side inside 37 before City Base that make chili properly.

I’m kidding of course, but I’m absolutely serious at the same time. I don’t expect anyone that grew up near Marbach to feel comfortable on Rigsby or Hackberry just like I don’t feel comfortable if I’m on Jackson Keller or SW 36th.

We live in a city where traveling a straight line east to west or south to north is a 30 minute drive. It’s a very insular and tribal city where neighborhood can be more defining than any other part of one’s upbringing.

All that said, I begrudgingly admit that it is capable for someone from the west side to make a good bowl of chili and he does.
