Hey all, I notice the video and recipe are different with cooking temp/time/baking soda. Tried making the recipe with the vice article recipe and the cookies are super tasty but the texture was fucked up. Any tips??

I tried to make these cookies using the recipe on Vice which adds 1/8 tsp baking soda. Do not use the baking soda! They did not come out right. Expanded to cover the entire baking sheet. I don't know what else I could have done wrong.
Calibrate oven, make sure 325 degrees IS 325 degrees. Preheat oven to 325 degrees.
160 grams sugar 1 ounce butter 36 grams almond flour 2 eggs 8 ounces chocolate 15 grams baking flour: wheat or gluten free blend, caputo fioreglut is closest to wheat. 1/4 teaspoon cream of tartar 1/4 teaspoon salt. Large grained salt for sprinkling in top. Coarse sea salt works.
Sift baking (or gluten free mixture) flour, then almond flour, mix together, add cream of tartar and salt to flour. Mix well.
Set up a double boiler. Add chocolate, then place butter in center on top. As double boiler heats, press chocolate, but not butter into bottom.
While chocolate is melting, add first eggs then sugar to a mixer. Place mixer on high speed. Stop occasionally to scrape sides and check to see if ribbons form when mixture is poured from scraper.
Once chocolate and butter are melted, mix together. Take off heat, add 1/2 of egg/sugar mixture to chocolate/butter mixture. This prevents shock. Mix completely. Then fold remainder if egg/sugar mixture.
Place 1/2 of flour mixture into chocolate/butter/sugar egg (aka wet ingredients) mixture. Mix well, add remainder of flour mixture to wet ingredients.
Oil baking pan. Use tablespoon size spoon to put mixture on baking pan. 325 degrees for exactly seven minutes.

Made these today–I only had 6 ounces of 70% –made up the other 2 ounces with 60%. They were fabulous!!!!
