polar solvents are just way more effective when it comes to yields but the quality of a water extraction is much higher since you don't change anything and you're not able to screw you're health up.

the water does not solve any cannabinoids if u take a look at a trichome head you can see that it's covered with a parafin(wax) layer which is not soluable.
When making water extraction the water only acts as a media to transfer the heads they don't get solved at all. They are broken of mechanically by agitating you're water plant material mix.
