I think the darkness in the shatter has more to do with how late the bud was harvested, later harvested bud will have darker amber trichomes, where as earlier harvested bud will have lighter trichomes. when you "concentrate" those the color also concentrates. Chlorophyll is also a possibility but not as likely with today's methods of extraction.
