From my experience as an expeditor in the kitchen, all the Chef's I knew were always down to drink every night and would come in for their shift at 12pm hungover. Good times.
Man , thats like one of those recepies that makes me wonder how that is supposed to taste.
I tried it without cilantro, since that tastes like a soap bar to me (for whoever doesn't know about it, look up cilantro gen) and it was pretty good but was clearly missing something.
Apparently this guy and his co owner are total douchebags who fostered an extremely toxic work environment at their restaurant to the point he had to step away this past summer. Sandwich looks amazing but there are other restaurants that will take my money.
Everyone who wants real Taiwanese cooking, get a Fu Pei Mei cookbook. The cool one open up to one page traditional Chinese (no commie simplified propaganda here) and the opposing page in English.
