Hell no to the instant ramen. Go buy some real noodles. Saimin always has spam or char siu. If you want something better than what this guy made. Get a char siu min from a Chinese restaurant. Can’t get good noodles in Brooklyn? WTF?
You can can chill the chicken and eat it with Chinese ginger scallion sauce.
Tbh the way that so many Asian cultures came together to make up most of Hawaiian culture is what America SAID they would do as a melting pot and it truly did not work as well hahaha. But to be fair America has different land types. Even then, we aren't as together.

We have a Haiwaiin grill in town and I ordered saimin with a side of chicken katsu. I was very surprised but I love it all the same. I am really sick right now, and was having trouble eating. I absolutely inhaled it and it helped me feel so much better.
This is almost as hard as making ramen. I thought soul food is supposed to be easy to made.
My first bowl of Saimin was at Zippys Makiki and it was a lighting bolt! Such deliciousness!

Sheldon why don't you and your gang revive our old family style " Saimin Stands"! Little tiny saimin stands all ova Hawaii. It's sad that iconic traditional Hawaii treasures are GONE! Our kids and grandkids never got to experience. It was our heritage….our history.
Hawaii is now just another fast paced State, looking more like the "mainland" like California and elsewhere. We're loosing who we were, who we ARE!
This old lady (me) is sad, but elated that you and other locals are sharing real Hawaii with the world.
