Also, to avoid fryer explosions, lightly salt the Yuca and keep the Yuca in the fridge over night on a baking cooling rack. This will extract a lot of the moisture and you can rub off the salt with a paper towel. So when you fry the next day, you wont have these crazy explosions that are caused by all the water.
