I buy Costco's spring rolls. They are small but you get 50 for $11. If I coat them in egg and pop them in the oven would it give more of an egg roll skin quality?
I'm going to be making old school egg rolls I ate as a child. With a batter. I'm guessing they first wrapped bean sprouts etc with rice paper then batter. They were 5x the size of the nowadays egg rolls. Mine will be chicken cabbage carrots shrimp bean sprouts. I want to try yours when I have ingredients. Wish me luck.
I am sooooo happy I came across this video! I lived walking distance to Chicago's Chinatown as a kid, I spent A LOT of time there too. The egg rolls Lucas made are the ones I grew up on….and they are the absolute freakin best!
My 2 favorite "street foods" while walking and exploring were these egg rolls and the hot, straight from the oven almond cookies from the Chinese bakery. You haven't lived until you have one of those mouth watering and melting cookies still on the hot trays…..beyond fresh.

WHY in the world did my wrappers spread open when I dropped them in the deep fryer? Didn't use water or egg….used butter…guess that was it, LOL. GREAT video, enjoyed watching and learned a lot!!!
We don't have egg rolls in the UK, but we have something very similar called a Chop Suey roll, which is much the same in size and ingredients, but the wrapper is more similar to a spring roll

I almost exclusively order egg rolls at any Asian restaurant I go to. They're my favorite in-the-truck food to eat. This one family in Manteca used mushrooms in their's. Didn't like them at first, but the restaurant put them in with every order for free. I always ate them because no one else in my home would. I don't like to waste. They were huge, and the mushrooms were slimey and chewy. Once my gut bacteria got used to them I loved them. I haven't lived there for a few years now and I still think about those egg rolls. No family in my city makes them like the family in Manteca did.

The wrapper you use has bubble after frying which usually means skin is thick and hold grease, you may want to try different brand.

What is the temp for the first fry, I heard 375f for second but didn’t hear any temp for 1st fry.

I probably would have cooked the shrimp in the oil with the pork instead of boiling it.
