That dtiff indide the dough look likr Chinese momos. The Chinede don't boil it but they dteam it instead and the fillings indide thr diugh usualky contains chicken , pork etc
I lived in a Siberian town that was 1/3 Ukrainian. They didn't have the best jobs in town, let's say, an underclass. Their vareniki are an amazing, and the tvorog s jagodom variety fried in butter is my favorite, a little taste of heaven!

In my Ukrainian family, the one thing we did that was different was, after boiling we would then add more fried onions on top, alternating them in layers with the fried onion in between. Then in the oven they would go for about 15 minutes. The plate up was a little heavy on the sour cream also But we were Ukrainian not Russian.
Great job! My BABA was an angel. She was such a good cook and I miss her varenikis. My mom had the same recipe but she added farmers cheese to the potatoes. Delicious!
I think she makes a mistake. Verenicki must be of the Russian cuisine. At least in all restaurants I was in France, belgium and England they call them Russian verenicks. I adore them especially with cherry!

What is the "Kaffir" "kafir" she's using? Is it a kind of yogurt? Or cream?
My German grandmother made those with a chipped beef gravy.. I still crave them forty years later
I used a different pasta dough and these turned out amazing. Kind of taste like an amazing pierogie!

My Baba has always put ricotta cheese as the filling and slathered it in butter. Always tasted amazing the next day when pan-fried.

usually vareniki is russian, varenyky is ukrainian. no real difference in ingrediants though 🙂

My baba used to make weeknight versions of these using lasagne noodles instead of homemade dough, still tasty!
